Summer Local Living May 2024— 35 Bonded Tour is the tour I ad- justed to allow for more time for the tasting portion of the expe- rience. Guests will be sampling the trio of Jack Daniel’s Bonded series, which includes Jack Daniel’s Bonded, Jack Daniel’s Triple Mash and Jack Daniel’s Bonded Rye. The tour will also make a stop in the distillery’s yeast room, who a microbiologist works daily to grow yeast from the same strain of yeast brought to Lynchburg by Jack Daniel himself more than 150 years ago. “There are very few distil- leries left on the planet that can say we have been growing this yeast for however many decades, and it is not purchased yeast, it is something that we grow,” Lirette said. After leaving the yeast room, the tour will visit fermentation and then mellowing, where vis- itors will get an up close look at the Jack Daniel’s charcoal mel- lowing process. “What we decided to do was to take them to the far side of mellowing where they not only see the whisky dripping on the charcoal, but they will stand there with the before and after, meaning the whisky before it hits the charcoal and the smell and taste of it compared to the whisky when it comes out of the bottom of that charcoal filter,” Lirette said. Before it is finally time to sip some whiskey, tour guests will learn about the history of the Bottled in Bond Act of 1897. The act designated that for whiskey to have that label, it must be made produced during a single season, from a single distillery, aged for a minimum of four years and bottled at 100 proof. “Our bonded warehouses were bonded for a reason,” Lirette said. “We still have the locks that the revenuers left on the actual warehouse and so we talk about the history behind the bottle and bond act and what that meant for consumers of alcohol.” For more information about the Jack Daniel Distill- ery Bonded Tour, visit https:// www.jackdaniels.com .
